This quick recipe is a favorite with my sons. We've enjoyed them on ciabatta rolls as well as the breads listed in the recipe. You can grilll them in a pan, broil them, or use a George Foreman grill or sandwich press -whatever you like best.
Whisk together olive oil, vinegar, basil, garlic, salt and pepper in small bowl.
Brush one side of each slice with oil mixture. Place mozzarella and pepperoni on half the bread slices.
If grilling, place second slice of bread on top of each sandwich. Brush the outsides with additional olive oil, or butter, or spray with cooking spray. Grill over medium heat.
Or, broil open faced in oven until cheese is hot and starts to melt. Remove from oven and place top slice of bread on each sandwich.
