This is the Australian potato at its best, just like Grandma used to make. Crispy golden outside soft fluffy inside.
Pre-heat fan forced oven to 220`c. Peel potatoes and cut into quarters. Oil baking tray and place potatoes on it in a single layer. Brush potatoes with oil and sprinkle very generously with salt. It is the salt that causes the outside to crisp up like when you make pork crackling, so dont be afraid to use a fair bit. Place into oven for 1 hour, reducing heat to 180`c after 20 minutes. Enjoy!
