Mix all dry ingredients in a bowl. Separately mix the Buttermilk, melted butter and egg yolks. Gently fold the wet ingredients into the dry ingredients with a rubber spatula. It should be lightly mixed (lot’s of lumps and dry flour spots are fine). Once lightly mixed fold in the egg whites, but DON’T OVER MIX. When done let the batter stand for 15 minutes. Heat a cast iron pan on medium flame and coat with butter. Drop in the batter and look for small bubbles to appear and break before you turn. Best darned pancakes ever.
