From cheerful sunny-side-up eggs with bacon to richly layered Huevos Rancheros, fried eggs are an essential part of breakfast for many of us.
Your eggs will look the most attractive if you fry them one serving at a time. If you like egg yolks set and firm, you can baste the tops with some of the butter or oil or you can sprinkle a few drops of water into the skillet, cover tightly, and "steam" for about 30 seconds.
Break 2 eggs per portion into a clean cup or small bowl.
To make eggs sunny-side up, heat 1 tablespoon of butter in a small saute pan over medium heat and carefully slide the eggs into the pan.
When the egg whites are set, after about 2 minutes, tilt the pan, allowing the fat to collect at the side of the pan, and baste the egg whites with the fat as they cook. At this point, the eggs are at the sunny-side up stage. To make eggs over-easy,-medium, or -hard, turn the eggs near the end of their cooking time with a spatula and cook them on the second side, 20-30 seconds for over-easy, 1 minute for over-medium, 2 1/2 minutes for over-hard..
Season the eggs with salt and pepper and serve at once on heated plates. Be careful not to break the yolks while sliding the eggs onto the plate.
