Combine dry ingredients. Measure milk in big measuring cup then add butter and egg. Whisk. Add wet to dry and whisk. Let sit for 5 minutes. Heat up stove to exact medium setting. 4 pancakes on nonstick griddle. (About 1/4 cup batter each)
Cast iron skillet at 1 notch under medium is perfect. Super fluffy - watch for raw middles.
