- For one serving, halve the recipe and use 1.5 tbs beef powder and 1 liter water and 250 gm meat balls (mixed with 1 small shallot minced, salt and pepper and a bit of powdered form of the whole spices). Make sure no more than 6 balls, thoerwise will disintegrate.
-On level 6 with Staub covered sear the halved onion and ginger in oil for 15 minutes on cut side only. Add the whole spices in a sachet and the water, 1/2 tsp liquid smoke, stock powder, meat balls, cover and turn to level 3 for 15 minutes. Remove sachet and ginger and onion and add fish sauce, lime juice (1/2 lime to start) and adjust seasoning.
- In the meantime, cook in water and a bit of OIL 160 gm rice sticks till A BIT undercooked and strain and RINSE with cold water
-Microwave stock-meatballs for 5 minutes before adding the noodles and serving.
-For the garnish: 1 sliced shallot, 20 gm mint and 20gm cilantro, 180 gm bean sprouts, 1 fresh thai pepper, hoisin
