Perfect shrimp every time
Pour 4 quarts water in a dutch oven; squeeze juice from lemon, halved, into the water. Stir in lemon halves, peppercorns, bay leaves, and salt; bring to a boil over medium-high heat.
Remove from heat and add shrimp. Cover and let stand 5 minutes or just until shrimp turn pink.
Place shrimp in a large bowl of ice water and let it stand 10 minutes. Peel and devein shrimp.
