Sprinkle gelatin over cold water in large heatproof bowl; let stand 1 minute. Add boiling water; stir until gelatin dissolves completely, 5 minutes. Stir in sugar, vinegar, lemon juice and salt. Chill, stirring occasionally until mixture is consistency of unbeaten egg whites, about 45 minutes. Fold in cabbage, celery, green pepper and pimento. Turn into 6-cup mold or bowl.
