1. Spiralize Zucchinis
2. Fry tomatoes in half the oil for 2 minutes, til they start to burst then remove
3. Add remaining oill and fry Zuchini noodles for about a minute until tender
4. Add pesto and tomatoes and toss to mix evenly.
5. Serve with parmesan cheese
