Adapted from a combination of my great-aunt’s gingerbread cookie recipe and other traditional pfeffernüsse recipes found online. It’s simple but ever so peppery and tasty! Depending on how you like your pfeffernüsse, you can adjust the pepper level and doneness. I like mine spicy and soft, so this recipe caters to my palette.
In a saucepan over medium heat combine the shortening, butter, molasses, and honey. Stir until all elements are melted, then bring to a boil, stirring constantly. Reduce to simmer for approximately five minutes, until a smooth and creamy foam developed and all ingredients are well-incorporated. Remove from heat and allow to cool, stirring occasionally.
Combine dry ingredients (flour, white sugar, brown sugar, baking soda, salt, spices) in a mixer at low speed, or mix by hand. Remember to occasionally stir the cooling molasses mixture - when it reaches room temperature, stir in the eggs until well-combined. Finally, incorporate the molasses-egg mixture into the dry goods until a firm dough is achieved. Refrigerate the dough in an airtight container for at least 2-6 hours, or even overnight.
Preheat oven to 325ºF/165ºC. Form dough into 3cm spheres and place onto ungreased baking sheet at least 4cm apart. Bake for 12 minutes for a softer cookie, or 15 minutes or more for a crisper, more toothsome biscuit. Remove and cool on a wire rack. Dust with confectioner’s sugar through a sieve.
Chilling the dough for a significant period of time is crucial to allow the dough to develop flavor and texture. Use freshly-ground ingredients for flavors that pop, and sift the flour after weighing for a lighter texture.
