Preheat 200.
Heat cast iron skillet over med-high heat. When hot, add EVOO. Add onions & green pepper. Cook, stirring until carmelized, approximately 6 mins. Add garlic, salt & pepper and cook, stirring, for 30 seconds. Push veggies to 1 side of skillet. Add meat to pan and cook, stirring and breaking up meat with the back of spatula. Cook until no longer pink, about 2 mins. Mix veggies into meat. Top with cheese slices and melt.
Meanwhile, heat buns in oven.
Spoon meat mixture onto warm buns.
