Vietnamese styled beef and noodle soup, similar to Pho
Microwave onions, garlic and oil in a bowl for 5 minutes, stirring a few times. Should be softened.
Put onions, garlic, chicken broth, beef broth, water, fish sauce, soy sauce, sugar and lemon grass in the slow cooker. Place star anise and whole cloves in a cheesecloth bag or tea bag and add to slow cooker. Season beef with salt and pepper and place into the liquid in the slow cooker.
Cover and cook on low 9 to 11 hours or on high 5 to 7 hours, until beef is tender.
Place beef on cutting board and shred into bite size pieces. After letting the liquid settle for a few minutes, skim fat from the surface. Discard the fat, spice bag and lemon grass.
Stir in the noodles, cover and cook on high until noodles are tender, 10 to 20 minutes. Stir beef back into the slow cooker and heat through before serving.
Serve with garnishes.
