In a large bowl, stir together flour, sugar, baking powder, cinnamon and salt. In another bowl use a fork to beat egg slightly; stir in milk and cooking oil. Add egg mixture to flour mixture all at once. Stir until just blended, but slightly lumpy. Stir in desired fruit.
For whole wheat pancakes: decrease all purpose flour to 3/4 cup and add 1 cup whole wheat.
