Good relish for hamburgers & hot dogs
Mix in 1/2 cup canning salt and soak for 3 hours. Drain well.
In large pan put in:
1 1/2 quart vinegar, 2 tsp mustard seed, 6 cups sugar, 1 tsp turmeric and 1 cup pimentos
Add diced mixture to this & boil until pale green ( about 45 minutes). Pack in jars & seal. Makes about 8 pints.
