Cook beets just long enough for skins to remove easily.
Add sugar and spices to vinegar and water. Simmer 15 minutes. Add beets and boil 5-10 minutes. Pack beets into hot sterilized jars. Cover with boiling syrup. Seal and process 5 minutes in boiling water bath.
