Recipe for quick pickled okra. Can be used in bloody mary's or other concoctions!
Rinse okra in a colander. Add 3 tblsp salt and toss to combine. Let okra drain in sink for 10 minutes. Meanwhile prepare and ice water bath.
Put the remaining 3 teaspoons of salt, 2 cups of water, the vinegar, sugar, bay leaves, pickling spices, cayenne pepper and jalapeno into a non-reactive saucepan. Bring to a boil over medium heat, stirring until sugar has dissolved.
Rinse okra under cold water to remove the salt. Transfer to a large bowl. Pour brine over okra. Set bowl in ice bath and let cool for 10 minutes. Transfer bowl to refrigerator and cool completely (about 25 minutes) before serving.
A very simple recipe. Follow the times and you will be fine. Good with bloody mary's or by themselves!
