Fun to make, and lasts forever! Very easy to scale up to make large batches.
Wash cukes, slice to desired thickness (5-10mm). Heavily cover in salt, toss, and leave for 20 minutes.
Rinse cukes thoroughly, then place in bowl with 2 cups cider vinegar, 2 cups rice vinegar.
Leave for 2-24 hours in fridge.
Drain, then combine 2 cups apple cider, 1 cup rice vinegar, 1 cup sugar. Once sugar is dissolved, pour over cukes, place in fridge.
Keeps for several weeks in fridge.
