Cut onions. Pour boiling water over onions and steep 10 minutes covered (not on flame). Drain. Mix lime juice, vinegar, oil, salt and spice mix together, pour over drained onions. Fold in tomatoes, peppers, cilantro, avocado, lime zest, garlic. Adjust quantities as needed.
