Mix flour blend ingredients. Store in air tight container.
Place flour blend, sugar, Xanthan gum, and salt in food processor. Pulse in butter. (Until just combined.)
Beat egg, cold water, and apple cider in a separate container.
Add egg mixture a bit at a time to flour mixture until dough holds together. (You will not use all the egg mixture, roughly less than 2 teaspoons))
Remove dough from food processor onto a sheet of cellophane, pat into a disc, wrap in cellophane, and chill for 1 hour.
Remove from fridge 15 minutes before rolling out.
