Stir flour and salt. Cut in shortning until pieces are pea sized. Add water. Stir until just mixed. For a double crust divide into two balls of dough.
To Roll Out:
Lay out a large square of saran wrap on a damp counter (so it will stick). Flatten out the dough into a circle with your hand and place in in the center of the saran wrap. Add another layer of saran wrap. Roll out to desired size. Peel off top layer of saran and flip over into your pie plate. Then remove the bottom saran wrap. Repeat for top crust.
