Whisk together first 4 ingredients.
Add flour, 1 cup at a time.
Turn onto floured board and knead until elastic (about 10 minutes).
Cut into 4 pieces. (Keep dough under upside-down bowl until needed).
Roll dough piece to 1/16" thickness.
Cut into squares or 3 inch circles.
Fill with 1 heaping tablespoonful of the potato-cheese mixture.
Wet edges of dough and press together firmly to seal well.
Place on a cloth until all are ready to be cooked in a large pot of boiling salted water.
Drop Pierogi in very carefully. Stir with a wooden spoon in order not to break them.
When water returns to a boil, cook the Pierogi 5 to 10 minutes, or until they start to puff up.
Drain in collander, don't rinse.
Place in pan containing sauteed onions and butter and fry if desired. Or, just serve topped with the sauteed onions and butter.
Sautee onions and butter.
Boil potatoes, drain and mash with about 3 tablespoons of the onion & butter mixture.
Salt and pepper to taste, if desired.
Add the velveeta and mash well until melted.
If you want to omit the onion just mash the potatoes with butter.
The type of filling you use is optional. You can just use the potatoes and butter if you like and omit the cheese and onion. Or omit just the onion. It's really up to you.
We love to serve them with a dollop of sour cream!
