Cut a circle of grease proof paper slightly bigger than a big shallow ovenproof pan, make a slit in the middle for steam to escape.
Sauté onions for a few mins then add garlic, lemon,thyme,chorizo, cayenne, saffron and chilli.
Cook for 5 mins.
Add cinnamon stick and rice and fry for 3-4 mins.
Add salt and pepper and stock, bring to boil then cover with the greaseproof paper and put in the oven for 10-15 mins.
Remove from the oven and remove the grease proof paper, scatter over the prawns and the basil leaves.
Replace in the oven for 5 mins.
Remove from the oven and leave to stand for 5 mins before taking off the paper.
Fluff up with a fork and serve.
