This recipe will involve some extra planning.
Cover a plate or tray with saran wrap. Scoop 2 heaping tablespoons of Palmetto Cheese and form a rectangular stick in your hand. Place the formed PC onto the plate. Continue this step with the rest of the tub. You should get 6 to 8 sticks. Place your plate into the freezer. Freeze for at least 4 hours or until the PC is very firm to the touch. This will keep it from falling apart.
Preheat oven to 400F
In 3 separate bowls you will have flour, 2 beaten eggs, and finely crushed Ritz crackers. Take your frozen PC stick and lightly flour. Next drench the stick in your beaten egg. Finally take your stick and completely cover with Ritz cracker crumbs. If you still have PC showing repeat the breading process again. Continue this step will all the PC sticks.
In a small saute pan or saucepan heat 3 cups of vegetable oil. Heat the oil to approx. 350F. Place your Palmetto Cheese sticks in the hot oil. Brown on each side being careful not to burn. Place browned sticks onto a sheet pan and place in the oven for 10 minutes. Serve with spicy ranch dipping sauce.
Spicy Ranch Dipping Sauce:
While your sticks are in the oven place ranch dressing into a bowl. Add hot sauce to your taste. Some like it really spicy and some a little less. Enjoy!
Note: recipe can be made with Original Palmetto Cheese and regular ranch dressing.
