Shred the yellow sharpe cheddar cheese on the large wholes on the box grater. Shred the white sharpe cheddar cheese on the small wholes on a box grater.
Fold the cheese and pimentos into the mayonnaise mixture until thoroughly combined. Serve on Ritz crackers or chill until ready to serve
