Grate the sharp, cheddar and Gouda on the large holes of a grater into a large bowl. Stir together the mayonnaise, pimentos, onion, Worcestershire, pepper, salt, cayenne and paprika in a medium bowl. Fold mayonnaise mix into cheese until well combined. Cover and refrigerate at last 4 hours.
