Creamy and delicious for both lettuce and zucchini pasta!
Pulse pine nuts in a food processor until they are finely ground. Add olive oil, lemon juice, water and a pinch of salt. Process until you have a dressing.
Works well with romaine lettuce, shredded or sliced carrots, tomatoes, and cucumber. May also be served with seaweed, sauerkraut, and onion alfalfa sprouts.
