Suggest a better descriptionFrom: metcalfe@upei.ca (Gail Metcalfe) Date: Wed, 24 Nov 1993 17:30:03 GMT Sprinkle gelatin over pineapple juice in a small saucepan; let stand 5 mins to soften. Add coconut extract. Heat just until gelatin melts. Cool to room temp. Place pineapple chunks, cottage cheese and sweetener in a blender or food processor. Process until pureed. Mix in gelatin mixture. Combine whipped topping mix and milk. Beat until stiff peaks form. Fold into gelatin mixture. Pour into 4-cup bowl or serving dish. Sprinkle with toasted coconut if desired.
