Preheat the oven to 180 C.
Place the butter, brown sugar, fruit and pineapple in a saucepan and bring to the boil.
Boil for 3 minutes and then remove from the heat and allow to cool.
Mix in eggs and then flour and vanilla essence.
Pour into a lined 20 cm square cake pan and bake for 1 hour.
