Pineapple Mint Shrub
Heat sugar and vinegar in large pot over medium low heat stirring until sugar has dissolved. Add pineapple, mint and lime juice and bring to simmer. Remove mixture from heat and cool. Strain mixture into 1 quart canning jar and allow to rest in refrigerator for two to four days before using and refrigerate between uses.
Pineapple Mint Mojito
Ina shaker combine one scoop ice with mint leaves and ry shake vigorously to muddle. Add rum, pineapple juice, lime juice, pineapple mint shrub, agave and shake. Strain into highball glass over ice and splash with sparkling soda. Garnish with mint sprigs and pineapple wedge
