Add chicken, soy sauce in slow cooker. Coat. Add carrots, water chestnuts and pineapple juice only. Cook 3 - 4 hours.
Refrigerate pineapple until later.
20 minutes before serving: wisk sweet and sour sauce, ginger and cornstarch. Add to crockpot with pineapple and veggies.
Done when veggies are tender.
Serve with cooked rice.
