Heat oven to 350 F. Melt margarine over low heat in round layer pan, 9x 1.5 inch. Sprinkle brown sugar evenly over margarine. Place pineapple slice in center of pan. Cut remaining slices in half; arrange halves cut sides out around pineapple ring in pan. Measure flour, sugar, baking powder, salt, milk, shortening, egg and vanilla into large mixer bowl. Blend for one-half minute on low speed, scraping bowl constantly. Beat 3 minutes on high speed, scraping bowl occasionally. Pour evenly over pineapple in pan. Bake 35-45 minutes or until wooden pick inserted in center comes out clean. Invert onto plate. Leave pan over cake for a few minutes. Serve warm. Serves: 12
