Melt butter in a 9 inch square pan while preheating oven to 375 degrees. Beat egg whites until soft peaks form and set aside. Combine cake flour, baking powder granulated sugar salt egg yolks and pineapple juice and beat until smooth. Fold in egg whites
Spread brown sugar evely over bottom of pan containing melted butter Arrange pienapple slices over sugar and butter and comver with batter. Bake 30-35 minutes or until cente springs back whern lightly touched
Allow cake ot cool 10-15 minutes Loosed edges with knife and turn upside down on serving plate
Note: this cake may take longer to bake and can look quite dark, Use toothpick to test.
