Delicious individual pineapple upside down cupcakes.
PREP: Preheat oven to 350 degrees.
PREP: Coat muffin tin in non-stick spray.
1. Cream margarine & sugar.
2. Beat in eggs, one at a time.
3. Stir in vanilla.
4. Whisk flour & baking powder together.
5. Add flour mixture to batter in two stages.
6. Stir milk into batter until smooth.
8. Melt butter & brown sugar in microwave.
9. Drop a spoonful of melted brown sugar in each muffin tin.
10. Place 4 pineapple chunks & 1 sliced cherry in each tin.
11. Fill each tin 1/2 full with batter.
12. Bake for 20 - 25 minutes.
13. Cool pans for 5 minutes, de-pan & serve warm.
Always coat with non-stick spray, even when using silicone or non-stick pans. Run a knife around the edge of each cupcake before de-panning if necessary.
