Suggest a better descriptionPreheat the oven to 250 degrees F.
Mix the sugars and set aside. In the bowl of an electric mixer, add egg whites. Beat until foamy, then add cream of tartar and salt.
Start adding sugar to the mixture slowly, 1 tablespoon at a time. Add raspberry extract and beat to incorporate. After this, the egg whites should appear stiff and glossy.
Transfer mixture to a piping bag fitted with a large star tip. Line 2 baking sheets with parchment paper. Pipe meringues into about 24 ribbon shapes.
Bake for 1 hour exactly, then turn off the oven and let the meringues sit for 3 hours, and up to 8. Don't open the oven door until then!
