Pour pistachio, 2 T of sugar and 1/2 T flour into processor and blitz to sand. Add remaining sugar and tip into bowl.
Mix in egg white and rum
Bring dough together and rest in fridge for 10mins
Heat fanoven to 200C
Roll golfbal sized dough in icing sugar.
Place on baking tray with space for spreading
Cook for 10mins and leave to cool before removing from tray.
