pre-heat oven to 350 degrees
grind pistachios, salt and pepper in food processor to a consistency in which you are able to coat the chicken
heat the oil in a pan
coat the chicken with the ground pistachios
saute in the pan until golden brown on each side. transfer to a baking dish and bake just until cooked through. You can do this in the pan but the coating tends to get too dark.
add a little oil to the same pan as the chicken (do not clean out the pieces of pistachios left behind) saute the onions
When the chicken is thoroughly cooked, add the onions to the top of the chicken and serve.
