Cut the pressed tofu into 3/4" cubes.
Mix the ground pistachios, garlic powder and pepper in a bowl. Mist the tofu cubes with the liquid amines, or toss gently in a separate bowl. Add 1/3 of the tofu cubes to the bowl of coating, and toss gently to coat all sides. Remove and repeat twice more with the remaining tofu.
Heat a nonstick pan over medium heat. Mist with olive oil. Add the tofu cubes. Allow to get crispy, then turn gently to brown all sides.
Meanwhile, mix the dressing ingredients together in a small bowl.
Top the lettuce or other greens with the hot tofu. Drizzle the dressing over all. Top with any leftover pistachio mixture.
