Standard Ganache Process
1.) Heat the cream or fruit puree with the glucose (if any) just up to a boil in a heavy bottom saucepan. If infusing herbs, spices, coffee, tea, etc. add to the liquid while heating, then remove from heat, cover tightly and allow to infuse until desired intensity of flavor is reached (as little as 2-3 minutes for tea, or up to 1 hour or more for whole spices, etc; mixture can also be cooled and allowed to stepp, refrigerate, overnight).
2.) Meanwhile, soften the butter if necessary in the microwave or place in a warm area; the butter should be creamy and offer no resistance when touched.
3.) Once liquid reaches a boil, pour over the finely chopped chocolate in a tall, narrow container. Allow to stand for 1-2 minutes so the chocolate can fully soften.
4.) Beginning in the in the center of the mixture, hold the blender at the bottom of the container and process to create a stable, shiny emulsion. Do not lift the head of the blender above the surface of the ganache while the blade is moving or ganache can splatter and also incorporate air bubbles.
5.) Gradually stir the blender in broader circles, to incorporate the liquid at the edge of the mixture.
6.) If any unmelted chocolate remains, warm very gently in the microwave or over a water bath while stirring; do not allow the temperature of the ganache to exceed 95F, blending until no visible streaks or pieces of butter remain. Transfer to a shallow, flat container, press plastic wrap directly on the surface, and allow to crystallize at room temperature (ideally 65F until pipeable)
