1) In a food processor, with motor running, add garlic clove and pulse until finely chopped
2) Add all herbs, cheese, pistachios, salt, and pepper and blend until finely chopped
3) Add olive oil until mixture becomes creamy and emulsified. Add more olive oil if needed
Makes about 1 cup
4) Serve over pasta or use as topping for pizza and sandwiches
We add a sprinkle of garlic salt to it as well when eating over pasta
