Pretty two-tiered layer cake that is a gorgeous green. Even better tasting the second day.
Preheat oven to 350(F) degrees. Combine cake mix, one pistachio pudding mix, 3 eggs and lemon-lime soda pop in a large mixing bowl. Blend well and pour into 13x9 inch pan or two 9x9 inch round cake pans. Bake in center of oven at 350(F) degrees for 35 to 40 minutes. Remove from oven onto wire rack to cool.
When ready to frost cake, whip together dream whip, milk and another pudding mix. (You may need to double this for a two tiered cake.) Frost cake and press pecan pieces and shredded coconut into sides and top of cake. Chill until ready to serve.
This moist and yummy but don't over cook. Check with a toothpick. It should come out cleanly when removed. I am also at a high altitude so the recipe may need adjusting where you are. I have also put in a small pistachio yogurt for fun.
