1) Preheat oven to 350 degrees.
2) Spray a muffin tin with cooking spray, and then add pepperoni to the bottom and sides of each mold.
3) Dice 12 pepperoni and then mix with egg whites, eggs, Mozzarella and seasoning in a large bowl.
4) Fill the muffin tin with egg mixture, topping with the remaining pepperoni slices, a few olive slices, and parmesan cheese.
5) Bake for 24-26 minutes.
