A great tasting and healthy pizza sauce that can be used for 3-4 pizzas, or for other pizza-related dishes. It's best on pizza but can also act as a pasta sauce in a pinch.
1) Heat oil in large saucepan over medium-high heat.
2) Add onions and garlic. No need to brown them, just get them fragrant and translucent.
3) Add other veggies, browning them only slightly.
4) Add the spices, toasting them until all moisture is absorbed. This allows dried spices to regain some of their aroma and adds smokiness.
5) Add the whole can of tomatoes. Stir everything together and heat until simmering.
6) Add salt, pepper, thyme and rosemary.
7) Cover or use a splatter guard and reduce to low heat.
8) Simmer, stirring occasionally until tomatoes have rendered down and veggies are soft, about 10-20 minutes.
9) Take off heat and let cool a couple of minutes.
10) Using an immersion blender or a food processor, puree the mixture to desired consistency. I like slightly lumpy.
11) Add oregano and pepper to taste.
12) Place back onto low heat and simmer until sauce is thick and smooth, from one to two hours.
13) Allow time to cool before using on pizza. Can be stored for about a week in the fridge or longer in freezer.
Feel free to customize as needed. Spices can be changed as long as oregano is dominant flavor and the base uses garlic, onions and tomatoes.
