BASIC DOUGH (for one 14" pan)
Combine 1 cup warm water, 1 package dry yeast and 1-1/2 cups of flour. Add and mix well: olive oil, salt and up to 1-1/2 cups more flour (whatever it takes for dough ball to hold together).
Knead on floured surface for 5 minutes, adding flour if sticky.
Let rise one hour, or until doubled, in a warm spot in lightly oiled bowl covered with a towel.
Punch down and let rise again for 15-20 minutes. Shape to pan and top, or freeze in disc shape for later use.
Prepare pizza pan by lightly oiling and sprinkling with corn meal.
Variation: Substitute 1 cup whole wheat flour for part of the all-purpose flour.
Mix together the puree, garlic, oregano, basil, bay leaf and black pepper, cover and bring to a boil. Uncover and simmer 30 minutes.
