1. Sift together flour, baking powder, and salt.
2. In a separate bowl, whisk the eggs and then slowly add the sugar. When well blended, add 2 teaspoons of vanilla extract, and 1 teaspoon of lemon or anise extract. Add 1/3 cup unsalted melted butter that has been cooled. Then gradually add flour mixture, a little at a time. Make sure it is completely mixed.
3. Place on pizzelle iron and cook about 10 seconds per side. If using electric maker, cook about 50-60 seconds.
