From Michael's Sicilian Aunties
Beat eggs well.
In a separate bowl, cream butter and sugar.
Add vanilla, anise oil, baking powder, salt, orange juice and rind.
Add eggs and mix well.
Add flour gradually to make a stiff batter.
Bake in pizzelle iron.
Store in open container such as a cardboard gift box with tissue.
Use only anise oil. Extract will not give you the taste and aroma that make these cookies so special. Squeeze pizzelle iron for delicate, lacy cookies.
