Place the peeled, chopped plantains into a high speed blender. Add the oil, water and apple cider vinegar. Blend until smooth. Place all remaining dry ingredients in a large bowl. Add plantain puree and stir until well mixed.
Pour a small amount of oil into a large frying pan to prevent sticking and add pancake mix 1/3 cup or less at a time on a medium low heat. Keep the pancakes warm in a 200 degree oven. Plantain batter burns more quickly, so check early before flipping.
