Put plums in a nonreactive pan and add water. Bring to a boil, then simmer for about 25 to 30 minutes, stirring occasionally, until skins are soft and fruit is really tender. Liquid should be well reduced.
Stir in sugar until dissolved. Add butter and bring the jam to a boil. Boil rapidly for about 10 to 15 minutes until setting point is reached.
Remove the pan from the heat, remove the pits and any scum form the surface with a slotted spoon, and let stand for about 5 minutes. Stir jam gently and remove from heat.
Prepare & fill jars and heat-process in a boiling water canner for 5 minutes.
