A baked Crumpet
1. Preheat oven to 375° F. Place 2 1/4 cups 1% milk in a micro-wave safe bowl and heat milk on high 30 seconds at a time between 105 and 115° F. Stir milk before taking the temperature so there is no "hot spots" in bowl. Add the package of yeast and 2 teaspoons of Honey: stir and let stand for 5 minutes.
2. With a wooden spoon, beat flour and salt into milk mixture until well combined and no lumps. Cover with clean cloth and let batter rise in warm place for 1 hour.
3. In a small bowl combine remaining 1/4 cup of milk with 1/2 teaspoon baking soda. When batter has risen, beat in milk and baking powder mixture. and let rest for 5 minutes.
4. Place 8, 4-inch crumpet or english muffin rings in a baking sheet lined with parchment paper. Spray rings with non-stick spray. Add about 1/2 cup batter into each ring and place in oven and bake for 25 to 30 minutes or until tops are golden brown and toothpick inserted in and comes out clean. Let cool on a wire rack.
