Place the chicken in a large pot with all the other ingredients and cover with water. Put on the stove and bring to a simmer over high heat. Lower the heat and poach the chicken for an hour in the simmering stock. Cook until the juices running from the bird are clear.
Once cooked, allow the chicken to cool in the stock, then remove it, and strain the cooled stock.
