Bring a saucepan of water to boil ready to poach the salmon
Melt the oil, add the onion, courgette, aubergine and stir fry for about 4 mins. (Until softened and coloured)
Drop in the thyme and stir fry for another min.
Squeeze in the tomato puree and mix to coat the veg.
Keep stirring continously for 45 secs before pouring in the balsamic and 100ml water
Bring to boil, then reduce to simmer for about 10 mins.
Slide the salmon into the water and poach for 10 mins
Drain and serve on top of the ratatouille
